Sticky braised tofu
Ingredients
- 1 blocks tofu
- 1 tbsp oil
- 4 spring onions
- 2 red onions, diced roughly
- 1 inch ginger, matchsticks
- 6 cloves garlic, minced
- 1 red pepper, thinly sliced
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- ½ tsp five spice
- 2 star anise
- ¼ tsp white pepper
- ½ cup vegan chicken stock
- 1 tbsp cornstarch
- Rice
Steps
- Drain and press the tofu. Once done pat dry with a towel and cut into cubes.
- Once pressed pat dry the tofu and sprinkle the top side of each square with a bit of salt to season.
- Heat a pan over medium high with some neutral oil. Once hot add the tofu in a single layer. Cook until golden brown on all sides then set aside.
- Add the garlic, spring onion whites, onion and ginger to the same pan. Cook for 2–3 minutes until slightly softened and fragrant.
- Add the brown sugar, soy sauce, five spice, star anise and stock. Return the tofu to the pan.
- Bring to a gentle simmer. Simmer for fifteen minutes, adding the bell pepper halfway.
- Add the cornstarch slurry and cook until thickened.
- Serve over cooked rice with a side of vegetables. Garnish with scallion greens and sesame seeds.
