Ingredients

  • 1 blocks tofu
  • 1 tbsp oil
  • 4 spring onions
  • 2 red onions, diced roughly
  • 1 inch ginger, matchsticks
  • 6 cloves garlic, minced
  • 1 red pepper, thinly sliced
  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • ½ tsp five spice
  • 2 star anise
  • ¼ tsp white pepper
  • ½ cup vegan chicken stock
  • 1 tbsp cornstarch
  • Rice

Steps

  1. Drain and press the tofu. Once done pat dry with a towel and cut into cubes.
  2. Once pressed pat dry the tofu and sprinkle the top side of each square with a bit of salt to season.
  3. Heat a pan over medium high with some neutral oil. Once hot add the tofu in a single layer. Cook until golden brown on all sides then set aside.
  4. Add the garlic, spring onion whites, onion and ginger to the same pan. Cook for 2–3 minutes until slightly softened and fragrant.
  5. Add the brown sugar, soy sauce, five spice, star anise and stock. Return the tofu to the pan.
  6. Bring to a gentle simmer. Simmer for fifteen minutes, adding the bell pepper halfway.
  7. Add the cornstarch slurry and cook until thickened.
  8. Serve over cooked rice with a side of vegetables. Garnish with scallion greens and sesame seeds.
