Ingredients

  • 100g butter
  • 1 small (about 600g) red cabbage, finely shredded
  • 1 Bramley apple, peeled, cored and sliced
  • 100g demerara sugar
  • 100ml red wine vinegar
  • 2 cinnamon sticks
  • 2 star anise
  • 2 cloves
  • 1 lemon, zested and juiced or for a festive twist, use orange zest and juice
  • Sea salt and freshly ground black pepper
  • Baking paper

Steps

  1. Preheat the oven to 160°C
  2. Melt the butter in a casserole dish over a medium heat.
  3. Add the cabbage and apple and cook for 5-10 minutes or until just soft.
  4. Add the remaining ingredients, season and stir together for a few minutes.
  5. Cover with a wet, crumpled piece of baking paper and a lid and transfer to the preheated oven.
  6. Cook for 1½ hours, stirring every 30 minutes, until reduced and tender. Serve immediately or cool
  7. Keep in the fridge for up to 3 days. Reheat to serve, adding a splash of water if it seems dry.
  8. Tips: Try adding orange zest and juice instead of the lemon for a more festive spin, or a glug of red wine along with the vinegar for extra flavour.
