Maple pecan roasted kumara
Ingredients
- ½ cup pecans, roughly chopped
- ⅛ cup plus 1 tbsp maple syrup
- ½ tsp salt
- ½ tsp cinnamon
- ⅛ tsp cayenne pepper
- 500g kumara, peeled and sliced
- 2 shallots, quartered
- 1 tbsp olive oil
- 1 tbsp unsalted butter
- Orange zest
Steps
- Preheat oven to 200ºC. Line a small baking sheet with parchment paper.
- Combine pecans, ⅛ cup maple syrup, ⅛ tsp salt, ⅛ tsp cinnamon and cayenne in a small saucepan. Cook over medium heat until bubbly and thickened.
- Pour onto parchment paper and spread in an even layer. Allow mixture to cool completely.
- Toss kumara and shallots with olive oil and remaining salt. Spread evenly on a large baking tray. Bake until almost tender, 15 - 20 minutes.
- Meanwhile microwave butter until melted. Stir in maple syrup and cinnamon. Remove kumara from oven and brush with maple butter.
- Flip the kumara slices over, then brush the other side. Place back in the oven for 10 more minutes, until browned and caramelized.
- Transfer kumara and shallots to a serving platter and scatter pecan praline mixture overtop. Garnish with orange zest.
