Maple pecan roasted kumara

Ingredients

  • ½ cup pecans, roughly chopped
  • ⅛ cup plus 1 tbsp maple syrup
  • ½ tsp salt
  • ½ tsp cinnamon
  • ⅛ tsp cayenne pepper
  • 500g kumara, peeled and sliced
  • 2 shallots, quartered
  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • Orange zest

Steps

  1. Preheat oven to 200ºC. Line a small baking sheet with parchment paper.
  2. Combine pecans, ⅛ cup maple syrup, ⅛ tsp salt, ⅛ tsp cinnamon and cayenne in a small saucepan. Cook over medium heat until bubbly and thickened.
  3. Pour onto parchment paper and spread in an even layer. Allow mixture to cool completely.
  4. Toss kumara and shallots with olive oil and remaining salt. Spread evenly on a large baking tray. Bake until almost tender, 15 - 20 minutes.
  5. Meanwhile microwave butter until melted. Stir in maple syrup and cinnamon. Remove kumara from oven and brush with maple butter.
  6. Flip the kumara slices over, then brush the other side. Place back in the oven for 10 more minutes, until browned and caramelized.
  7. Transfer kumara and shallots to a serving platter and scatter pecan praline mixture overtop. Garnish with orange zest.
