Molten lava tofu
Ingredients
- 1 block firm tofu
- Water
- Baking soda, 1% of water
- Salt, 1% of water
- Cornstarch
- 3 tsp light soy sauce
- 1 tsp black vinegar
- 1 tsp red chilli, chopped
- 1 tsp spring onion, chopped
- 1 tsp coriander, finely chopped
Steps
- Cut tofu into cubes. Combine water, salt and baking soda in a shallow dish. Add the tofu, making sure it is covered. Soak for 4-8 hours.
- Take tofu out of the solution and pat with a towel to absorb excess water. Leave to air dry.
- Combine ingredients from soy sauce to coriander to make the sauce. Set aside.
- Coat the tofu with a thin layer of cornstarch.
- Heat oil in a pan over medium heat. Once hot add the tofu. Cook until golden brown on each side.
