Ingredients

  • 1 block firm tofu
  • Water
  • Baking soda, 1% of water
  • Salt, 1% of water
  • Cornstarch
  • 3 tsp light soy sauce
  • 1 tsp black vinegar
  • 1 tsp red chilli, chopped
  • 1 tsp spring onion, chopped
  • 1 tsp coriander, finely chopped

Steps

  1. Cut tofu into cubes. Combine water, salt and baking soda in a shallow dish. Add the tofu, making sure it is covered. Soak for 4-8 hours.
  2. Take tofu out of the solution and pat with a towel to absorb excess water. Leave to air dry.
  3. Combine ingredients from soy sauce to coriander to make the sauce. Set aside.
  4. Coat the tofu with a thin layer of cornstarch.
  5. Heat oil in a pan over medium heat. Once hot add the tofu. Cook until golden brown on each side.
