  • Coriander lime rice
  • 1 onion, diced
  • 6 cloves garlic
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 can tomatoes
  • 1 large jalapeno, diced
  • 1 tbsp cumin
  • 1 tsp chilli powder
  • 1 tsp chipotle powder
  • 1 can corn
  • 1 can black beans
  • ¼ – ½ cup coriander
  • 6 large flour tortillas
  • 2 cups shredded lettuce
  • Guacamole

Steps

  1. In the wok cook onion, garlic and bell pepper, sauté for 5 minutes.
  2. Add the tomatoes, jalapeno, cumin, chilli powder and salt, mix well and continue to cook another 4 – 5 minutes.
  3. Add the black beans and corn, cook a few minutes until warmed through.
  4. Stir in the coriander. Taste for seasoning.
  5. Assemble the burritos.
