Vegan burritos
Ingredients
- Coriander lime rice
- 1 onion, diced
- 6 cloves garlic
- 1 green bell pepper
- 1 red bell pepper
- 1 can tomatoes
- 1 large jalapeno, diced
- 1 tbsp cumin
- 1 tsp chilli powder
- 1 tsp chipotle powder
- 1 can corn
- 1 can black beans
- ¼ – ½ cup coriander
- 6 large flour tortillas
- 2 cups shredded lettuce
- Guacamole
Steps
- In the wok cook onion, garlic and bell pepper, sauté for 5 minutes.
- Add the tomatoes, jalapeno, cumin, chilli powder and salt, mix well and continue to cook another 4 – 5 minutes.
- Add the black beans and corn, cook a few minutes until warmed through.
- Stir in the coriander. Taste for seasoning.
- Assemble the burritos.
