Ingredients

  • 450g tofu
  • 2 tbsp yogurt
  • 1 tbsp dijon mustard
  • 2 tsp agave
  • Zest of 1 lemon
  • 3 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp soy sauce
  • 4 cloves garlic, minced
  • 2 tbsp nooch
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 2 tsp oregano
  • 1 tsp thyme
  • Salt and pepper
  • Skewers
  • 4 pitas
  • ½ red onion, thinly sliced
  • ½ cup parsley, chopped
  • 4 tomatoes, chopped

Steps

  1. Combine ingredients from yogurt to salt and pepper in a bowl and mix well. Reserve two tablespoons.
  2. Pat the tofu dry then drain and press. Once done break into bite sized pieces and add to the marinade. Gently toss to coat.
  3. Skewer the tofu chunks. Heat a skillet over medium heat. Add the skewers to the skillet and cook on each side until browned.
  4. Once browned brush with the remaining marinade. Serve by grilling the pita, smothering over tzatziki and topping with tofu and vegetables.
