Tofu souvlaki
Ingredients
- 450g tofu
- 2 tbsp yogurt
- 1 tbsp dijon mustard
- 2 tsp agave
- Zest of 1 lemon
- 3 tbsp lemon juice
- 2 tbsp olive oil
- 2 tbsp soy sauce
- 4 cloves garlic, minced
- 2 tbsp nooch
- ½ tsp smoked paprika
- ½ tsp onion powder
- 2 tsp oregano
- 1 tsp thyme
- Salt and pepper
- Skewers
- 4 pitas
- ½ red onion, thinly sliced
- ½ cup parsley, chopped
- 4 tomatoes, chopped
Steps
- Combine ingredients from yogurt to salt and pepper in a bowl and mix well. Reserve two tablespoons.
- Pat the tofu dry then drain and press. Once done break into bite sized pieces and add to the marinade. Gently toss to coat.
- Skewer the tofu chunks. Heat a skillet over medium heat. Add the skewers to the skillet and cook on each side until browned.
- Once browned brush with the remaining marinade. Serve by grilling the pita, smothering over tzatziki and topping with tofu and vegetables.
