Ingredients

  • 1 cucumber, thinly sliced
  • 1 tbsp salt
  • ¼ cup thinly sliced onion
  • 1 green onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp soy sauce
  • 2 tsp gochugaru
  • 2 tsp sesame oil
  • 2 tsp toasted sesame seeds
  • 1 tsp sugar
  • 1 tsp vegan fish sauce
  • ½ tsp msg

Steps

  1. Place the cucumber in a large bowl, add the salt, and gently mix them together. Let it sit for 15 minutes.
  2. Rinse the cucumber under cold running water to remove the salt. Pat dry and place in a clean bowl.
  3. Add the onion, green onion, garlic, soy sauce, gochugaru, sesame oil, sesame seeds, sugar, fish sauce and msg.
  4. Mix well to coat. Place in a sealed container and refrigerate.
