Scallion speckled rice

Ingredients

  • 12 spring onions
  • 2 tbsp vegetable oil
  • 1 cup rice
  • ½ tsp salt

Steps

  1. Clean the rice, add salt and cook.
  2. Remove dark green tops from spring onions and thinly slice on a diagonal, set aside.
  3. Thinly slice white. Heat oil in a pan over medium. Add spring onion whites and cook, stirring occasionally, until golden.
  4. Scatter dark green spring onion on top of rice. Drape a kitchen towel over it and let it sit for ten minutes.
  5. Fluff rice with a fork to incorporate scallions. Taste and season with more salt if needed.
