Scallion speckled rice
Ingredients
- 12 spring onions
- 2 tbsp vegetable oil
- 1 cup rice
- ½ tsp salt
Steps
- Clean the rice, add salt and cook.
- Remove dark green tops from spring onions and thinly slice on a diagonal, set aside.
- Thinly slice white. Heat oil in a pan over medium. Add spring onion whites and cook, stirring occasionally, until golden.
- Scatter dark green spring onion on top of rice. Drape a kitchen towel over it and let it sit for ten minutes.
- Fluff rice with a fork to incorporate scallions. Taste and season with more salt if needed.
