Jamaican jerk tofu
Ingredients
- 1 block tofu
- ⅓ cup vegetable stock
- 1 tsp bbq seasoning
- 1 ½ tsp poultry seasoning
- 1 ½ tbsp cornstarch
- ⅓ cup bbq sauce
- 1 tbsp jerk sauce
- 2 tsp oil
- 1 bunch kale
- 2 tsp olive oil
- 4 garlic cloves, minced
- Lemon wedge
- Rice
Steps
- Press your tofu for 30 mins. Tear into uneven pieces and place in a large bowl.
- Add vegetable stock, bbq seasoning and poultry seasoning. Mix until tofu is coated and let season for at least 30 minutes.
- Add cornstarch to tofu and mix to coat.
- Cook the tofu in the air fryer until golden brown and crispy on all sides.
- In a bowl add the bbq sauce to the jerk sauce 1 teaspoon at a time, tasting for heat. Add the tofu and toss to coat.
- In a large skillet, heat the oil over medium heat. Add the garlic and cook until fragrant.
- Add the kale, garlic, salt, and pepper. Sauté until wilted. turn off the heat and squeeze over a little lemon juice.
- Serve tofu with rice and peas and kale.
