Ingredients

  • 4 scotch bonnets
  • 1 red onion, chopped
  • 6 cloves garlic
  • 5 stalks of scallion
  • ¼ cup apple cider vinegar
  • ¼ cup soy sauce
  • 1 ½ tsp sea salt
  • 1 tbsp black pepper
  • 1 tbsp ginger, grated
  • 2 tbsp brown sugar
  • 1 tsp nutmeg
  • 1 tsp allspice
  • 1 tsp cinnamon
  • 2 tbsp oil
  • 7 sprigs of fresh thyme
  • Juice of half a lime
  • Salt & pepper

Steps

  1. Add all the ingredients to a high speed blender and blend until completely incorporated. Pour into a sanitised jar and place in your fridge.
