Jollof rice
Ingredients
- Big splash of vegetable oil
- 2 large red onions
- 4 tbsp tomato paste
- 6 garlic cloves
- ¼ inch ginger
- 1 scotch bonnet
- 4 very large tomatoes
- 2 red bell peppers
- 2 cups basmati rice
- 1 cup water
- 1 stock cube
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp smoked paprika
- ½ tsp chilli powder
- 1 tsp oregano
- 1 tsp thyme
- 2 bay leaves
- Salt to taste
Steps
- Thinly slice one red onion then fry in oil on medium heat until turning brown. Add tomato paste and fry for another 5-10 minutes.
- Blend the other red onion, bell pepper, garlic, ginger, scotch bonnet and tomatoes.
- Add to the pan along with dried seasonings and simmer for 20 minutes of until dark, thick and splitting.
- Add boiled water and washed rice and stir to combine. As soon as it comes to a boil reduce the heat to low, cover and cook for 25 minutes.
- Take off heat and leave covered to steam for another 10 minutes. Remove the bay leaves, stir and serve.
