Ingredients

  • Big splash of vegetable oil
  • 2 large red onions
  • 4 tbsp tomato paste
  • 6 garlic cloves
  • ¼ inch ginger
  • 1 scotch bonnet
  • 4 very large tomatoes
  • 2 red bell peppers
  • 2 cups basmati rice
  • 1 cup water
  • 1 stock cube
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp chilli powder
  • 1 tsp oregano
  • 1 tsp thyme
  • 2 bay leaves
  • Salt to taste

Steps

  1. Thinly slice one red onion then fry in oil on medium heat until turning brown. Add tomato paste and fry for another 5-10 minutes.
  2. Blend the other red onion, bell pepper, garlic, ginger, scotch bonnet and tomatoes.
  3. Add to the pan along with dried seasonings and simmer for 20 minutes of until dark, thick and splitting.
  4. Add boiled water and washed rice and stir to combine. As soon as it comes to a boil reduce the heat to low, cover and cook for 25 minutes.
  5. Take off heat and leave covered to steam for another 10 minutes. Remove the bay leaves, stir and serve.
