Ingredients

  • 4 cups Brussels sprouts
  • 2 tsp vegetable oil
  • ½ tsp sea salt
  • ½ tsp fresh black pepper
  • 4 cloves garlic, smashed
  • 1 tbsp miso paste
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • Pinch sea salt
  • 1 ½ tbsp vegetable oil

Steps

  1. Preheat oven to 200°C. Trim the sprouts stems and halve them.
  2. Add sprouts to a large bowl and season with oil, salt and pepper. Toss to coat and set aside.
  3. In a small bowl mix together the miso paste, rice vinegar, maple syrup and salt. Whisk to combine. Set aside.
  4. Heat a large pan over medium high heat. Once hot add vegetable oil and coat the bottom of the pan.
  5. Add the sprouts in a single layer, batch cook if necessary. Cook cut side down until browned. Add garlic, toss and transfer to the oven.
  6. Bake for 10-15 minutes, removing from the oven every 5 minutes to toss and inspect the sprouts.
  7. Remove from oven and immediately add half the miso glaze. Toss to coat and serve hot with remaining glaze on the side.
