Miso glazed brussels sprouts
Ingredients
- 4 cups Brussels sprouts
- 2 tsp vegetable oil
- ½ tsp sea salt
- ½ tsp fresh black pepper
- 4 cloves garlic, smashed
- 1 tbsp miso paste
- 1 tbsp rice vinegar
- 1 tbsp maple syrup
- Pinch sea salt
- 1 ½ tbsp vegetable oil
Steps
- Preheat oven to 200°C. Trim the sprouts stems and halve them.
- Add sprouts to a large bowl and season with oil, salt and pepper. Toss to coat and set aside.
- In a small bowl mix together the miso paste, rice vinegar, maple syrup and salt. Whisk to combine. Set aside.
- Heat a large pan over medium high heat. Once hot add vegetable oil and coat the bottom of the pan.
- Add the sprouts in a single layer, batch cook if necessary. Cook cut side down until browned. Add garlic, toss and transfer to the oven.
- Bake for 10-15 minutes, removing from the oven every 5 minutes to toss and inspect the sprouts.
- Remove from oven and immediately add half the miso glaze. Toss to coat and serve hot with remaining glaze on the side.
