Macho peas
Ingredients
- 2 cups peas
- 2 tbsp mint, finely chopped
- 2 tbsp parsley, finely chopped
- 1 red chilli, finely chopped
- 1 tbsp butter, unsalted
- 1 tbsp olive oil
- Salt & pepper
Steps
- Boil water in a saucepan, add the peas and boil for three minutes.
- Drain the peas using a sieve. Divide the peas into two bowls.
- In one bowl drizzle the olive oil and butter. Use a fork to mash the peas.
- Add the chopped herbs and chilli to the bowl containing the mashed peas.
- Mix the mashed peas with the whole peas. Stir to combine.
