Ingredients

  • 2 cups peas
  • 2 tbsp mint, finely chopped
  • 2 tbsp parsley, finely chopped
  • 1 red chilli, finely chopped
  • 1 tbsp butter, unsalted
  • 1 tbsp olive oil
  • Salt & pepper

Steps

  1. Boil water in a saucepan, add the peas and boil for three minutes.
  2. Drain the peas using a sieve. Divide the peas into two bowls.
  3. In one bowl drizzle the olive oil and butter. Use a fork to mash the peas.
  4. Add the chopped herbs and chilli to the bowl containing the mashed peas.
  5. Mix the mashed peas with the whole peas. Stir to combine.
