  • 1-2 potatoes
  • ½ cup potato boiling water
  • ¼ cup plant milk
  • ⅓ cup olive oil
  • 2 cups tapioca starch
  • ¼ cup nooch
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • 1 tsp salt
  • ⅓ cup grated vegan cheese

Steps

  1. Preheat your oven to 180°C and bring a large pot of water to a boil. Line a baking tray with parchment.
  2. Peel and chop potatoes, then boil until fork tender. Drain and set aside, reserving ½ cup of the boiling water.
  3. Pour the reserved water into a bowl and whisk along with plant milk and olive oil.
  4. In another bowl whisk together remaining ingredients except the cheese. Add to the liquid ingredients and mix. Fold in the cheese.
  5. Start with a spatula and then work the dough using your hands. It may be a little dry at first but just compact the dough and pack it tightly.
  6. Roll tablespoon sized balls of dough. Space them evenly on the baking tray, leaving at least 1 inch between each ball of dough.
  7. Bake for 25-30 minutes, or until the bottom of the bread is golden brown and small cracks start to form on the surface.
