Ingredients

  • 1 block extra firm tofu
  • 4 tbsp cornstarch
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tsp garlic powder
  • 1.5 tbsp gochujang
  • 1 tsp minced garlic
  • 1 tbsp sesame oil
  • 2 tsp gochugaru
  • 1 tbsp soy sauce
  • 1 tbsp rice wine vinegar
  • 1 tsp sweetener
  • 150g silken tofu
  • ½ tbsp gochujang
  • 1 tsp dijon mustard
  • Squeeze of lemon
  • 1 tsp minced garlic
  • 1 tsp salt
  • Spring onion

Steps

  1. Press the tofu with paper towels to remove excess moisture. Cut it into fry-shaped pieces.
  2. Combine corn starch with salt, black pepper and garlic powder. Whisk until fully combined.
  3. Toss the tofu piece one by one in the corn starch to coat evenly.
  4. Add the tofu to the air fryer in a single layer, fry in batches if needed. Cook until golden and crispy, flipping halfway.
  5. Meanwhile combine ingredients from silken tofu to salt in the blender and blend until uniform.
  6. In a pan combine sesame oil, gochujang and stir over heat.
  7. Add gochugaru, soy sauce, rice wine vinegar, sweetener and mix well.
  8. Add a splash of water for the sauce to be thick but not too thick.
  9. Transfer the fries to a plate lined with paper towels to absorb excess oil.
  10. Toss the tofu fries in the sauce. Garnish with spring onions and serve with sauce.
