Ingredients

  • 6 spicy sausages, sliced
  • 1 onion, diced
  • 2 stalks celery, diced
  • 6 cloves of garlic
  • 1 chilli pepper
  • 1 red pepper
  • 1 green pepper
  • 1 large carrot
  • 20 button mushrooms
  • 1 tbsp tomato paste
  • 1 can tomatoes
  • 4 cups vegetable stock
  • 2 tsp thyme
  • 1 tsp paprika
  • 1 tsp cumin
  • ½ tsp cayenne
  • 2 bay leaves
  • 2 tbsp cajun
  • 2 cups rice
  • A handful of coriander

Steps

  1. Add the oil to the wok and when it’s hot add the onion then the garlic followed by the vegetables.
  2. Add the canned tomatoes and cook another 5 minutes.
  3. Add the soy sauce and the spices and stir. Then add the rice and vegetable stock and bring to a boil.
  4. Cook over medium-high heat for 15 minutes or until the rice is cooked.
