Jambalaya
Ingredients
- 6 spicy sausages, sliced
- 1 onion, diced
- 2 stalks celery, diced
- 6 cloves of garlic
- 1 chilli pepper
- 1 red pepper
- 1 green pepper
- 1 large carrot
- 20 button mushrooms
- 1 tbsp tomato paste
- 1 can tomatoes
- 4 cups vegetable stock
- 2 tsp thyme
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp cayenne
- 2 bay leaves
- 2 tbsp cajun
- 2 cups rice
- A handful of coriander
Steps
- Add the oil to the wok and when it’s hot add the onion then the garlic followed by the vegetables.
- Add the canned tomatoes and cook another 5 minutes.
- Add the soy sauce and the spices and stir. Then add the rice and vegetable stock and bring to a boil.
- Cook over medium-high heat for 15 minutes or until the rice is cooked.
