Cauliflower in tamarind sauce
Ingredients
- 130g self-raising flour
- 2 tbsp panko
- Salt
- White pepper
- 180ml cold sparkling water
- ½ cauliflower
- 1 tbsp tamarind paste
- 4 tbsp brown sugar
- 1 tbsp vegan fish sauce
- 1–2 dried chillies
- Handful of Thai basil
- Crispy fried shallots
Steps
- In a small pan mix the tamarind, sugar and fish sauce with five tablespoons of water.
- Heat on medium and cook until the sugar dissolves and the sauce has thickened slightly.
- In a bowl mix the flour, panko, salt, pepper and sparkling water. Mix to form a batter.
- Drop the cauliflower into the batter and mix well until it’s all coated.
- Cook in batches in the air fryer until golden and crispy.
- Fry the dried chillies and thai basil in a pan for a few minutes until it starts to crisp.
- Toss the cauliflower in the sauce and top with chillies, basil and shallots.
