Ingredients

  • 130g self-raising flour
  • 2 tbsp panko
  • Salt
  • White pepper
  • 180ml cold sparkling water
  • ½ cauliflower
  • 1 tbsp tamarind paste
  • 4 tbsp brown sugar
  • 1 tbsp vegan fish sauce
  • 1–2 dried chillies
  • Handful of Thai basil
  • Crispy fried shallots

Steps

  1. In a small pan mix the tamarind, sugar and fish sauce with five tablespoons of water.
  2. Heat on medium and cook until the sugar dissolves and the sauce has thickened slightly.
  3. In a bowl mix the flour, panko, salt, pepper and sparkling water. Mix to form a batter.
  4. Drop the cauliflower into the batter and mix well until it’s all coated.
  5. Cook in batches in the air fryer until golden and crispy.
  6. Fry the dried chillies and thai basil in a pan for a few minutes until it starts to crisp.
  7. Toss the cauliflower in the sauce and top with chillies, basil and shallots.
