Curry base
Ingredients
- 4 large onions
- 6 cloves garlic
- 1 ½ Tbsp ginger coarsely chopped
- 1 ½ Tbsp cumin powder
- 1 ½ Tbsp coriander powder
- 1 ½ tsp turmeric
- 1 ½ tsp salt
- 1 packet coriander
- ½ cup vegetable oil
- 6 cups boiling water
- ½ tin tomatoes
Steps
- Bring the water to a boil.
- Quarter the onions and then break them apart into petals.
- Combine all ingredients except tomatoes, bring to a boil and simmer loosely covered for one hour.
- Add tomatoes, stir and simmer an additional 20 minutes.
- Let cool slightly. Blend to smooth consistency.
- Return curry base to pot and simmer for half an hour.
