Ingredients

  • 4 large onions
  • 6 cloves garlic
  • 1 ½ Tbsp ginger coarsely chopped
  • 1 ½ Tbsp cumin powder
  • 1 ½ Tbsp coriander powder
  • 1 ½ tsp turmeric
  • 1 ½ tsp salt
  • 1 packet coriander
  • ½ cup vegetable oil
  • 6 cups boiling water
  • ½ tin tomatoes

Steps

  1. Bring the water to a boil.
  2. Quarter the onions and then break them apart into petals.
  3. Combine all ingredients except tomatoes, bring to a boil and simmer loosely covered for one hour.
  4. Add tomatoes, stir and simmer an additional 20 minutes.
  5. Let cool slightly. Blend to smooth consistency.
  6. Return curry base to pot and simmer for half an hour.
