Ingredients

  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • 2 and ⅓ cups grated carrot
  • 1 and ½ cups brown sugar
  • 2 Tbsp Ground Flaxseed Meal
  • ½ cup olive oil
  • 1 tsp vanilla
  • 1 Tbsp apple cider vinegar
  • 1 cup chopped walnuts
  • 3 and ¾ cups icing sugar
  • 3 Tbsp vegan butter
  • 1 tsp vanilla
  • 2 tsp apple cider vinegar
  • 3–4 Tbsp lemon juice

Steps

  1. Preheat the oven to 180°C then grease and line cake pans.
  2. Sift the flour, baking powder, baking soda, salt, cinnamon and nutmeg into a mixing bowl.
  3. Add the grated carrot and the brown sugar.
  4. Mix flaxseed meal with 6 Tbsp Water and allow to sit for a minute.
  5. In the meantime, add the oil, vanilla and apple cider vinegar to the mixing bowl.
  6. Add the flax eggs.
  7. Mix everything together in the mixing bowl. If too dry sit for a minute then add a tiny bit of milk.
  8. Add the chopped walnuts.
  9. Add the batter to the cake tins.
  10. Place into the oven and bake for 30 minutes or until a knife comes out clean.
  11. Allow the cakes to cool completely on a cooling rack, while cooling prepare icing.
  12. Add powdered sugar, vegan butter, vanilla, apple cider vinegar and 3 Tbsp of lemon juice to a bowl.
  13. Start mixing on low speed.
  14. Ice your cake and sprinkle chopped walnuts on top.
