Spinach Dal
Ingredients
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 onion, diced
- 2 chillies, diced
- 2-inches fresh ginger, minced
- 6 garlic cloves, minced
- 1 tsp turmeric
- 1 tsp cumin
- ½ tsp coriander
- ½ tsp cayenne
- 1 can diced tomatoes
- 1 cup dry yellow split peas, soaked in water*
- Spinach leaves, roughly chopped
- Coriander
- Naan
- Rice
Steps
- Cook the rice.
- In the wok add the cumin and mustard seeds to some oil.
- Add the onion, chillies, ginger, garlic, turmeric, coriander, cumin and cayenne then stir.
- Pour in the drained diced tomatoes and simmer. Mash them with the back of a spoon.
- Stir in the split peas with 3 and ½ cups water then simmer for roughly 30 mins.
- Add the spinach to the pot and cook until it starts to wilt.
- Serve with rice and naan.
