Ingredients

  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 onion, diced
  • 2 chillies, diced
  • 2-inches fresh ginger, minced
  • 6 garlic cloves, minced
  • 1 tsp turmeric
  • 1 tsp cumin
  • ½ tsp coriander
  • ½ tsp cayenne
  • 1 can diced tomatoes
  • 1 cup dry yellow split peas, soaked in water*
  • Spinach leaves, roughly chopped
  • Coriander
  • Naan
  • Rice

Steps

  1. Cook the rice.
  2. In the wok add the cumin and mustard seeds to some oil.
  3. Add the onion, chillies, ginger, garlic, turmeric, coriander, cumin and cayenne then stir.
  4. Pour in the drained diced tomatoes and simmer. Mash them with the back of a spoon.
  5. Stir in the split peas with 3 and ½ cups water then simmer for roughly 30 mins.
  6. Add the spinach to the pot and cook until it starts to wilt.
  7. Serve with rice and naan.
