Ingredients

  • 2 large ripe bananas, mashed
  • ½ cup non-dairy milk
  • 1 tbsp apple cider vinegar
  • ¼ cup pure maple syrup
  • 1 tsp vanilla extract
  • ¼ cup creamy peanut butter
  • 2 cups rolled oats
  • 1 tsp ground cinnamon
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup dark chocolate chips

Steps

  1. Preheat the oven to 180°C. Grease a muff or line a muffin tin then set aside.
  2. In a blender, add the wet ingredients (bananas, milk, vinegar, syrup and peanut butter). Blend until smooth.
  3. Next layer the dry ingredients (rolled oats, cinnamon, baking powder, soda, and salt).
  4. Blend on high until oats are broken down and a smooth batter forms. Stir in the chocolate chips by hand.
  5. Pour the batter into the muffin tin. Bake in the oven for 20-25 minutes.
