Al pastor tofu tacos
Ingredients
- 400g tofu
- 2 tbsp soy sauce
- 1 tbsp oil
- 2 tsp cumin
- 1 tsp paprika
- 1 tbsp cornstarch
- 1 onion
- 5 cloves garlic
- 1 tsp cumin
- 1 tsp paprika
- ½ tsp chilli powder
- 2 tbsp tomato paste
- ⅓ cup pineapple juice
- ½ tbsp soy sauce
- Coriander, chopped
- Pineapple, chopped
- Red onion, diced
- Juice of 1 lime
- Cherry tomatoes, quartered
- 1 large avocado
- ½ cup yogurt
- ½ tsp garlic powder
- 1 ½ tbsp lime juice
- ¼ tsp salt
- ⅛ tsp black pepper
- Tacos
Steps
- Drain and press the tofu. Then pat dry and cut into small cubes.
- Toss tofu in soy sauce, oil, cumin, paprika and cornstarch.
- Spread on a baking tray and bake at 175°C for 30mins, mixing occasionally.
- Meanwhile in a hot pan with some oil cook the onion until translucent.
- Add ingredients from garlic to soy sauce and simmer until thickened.
- Add tofu to pan and stir to coat.
- Mix ingredients from coriander to cherry tomatoes for salsa.
- Blend ingredients from avocado to pepper for crema.
