Roasted cauliflower pitas
Ingredients
- 1 cauliflower, cut into florets
- 3 Tbsp Schwarma paste
- Pita bread
- 1 cup spinach
- ½ red onion, thinly sliced
- Cauliflower leaves
- Juice of a lemon
- 1 clove garlic
- 1 tbsp cumin
- 1 tsp brown sugar
- 1 green chilli, sliced
- Bunch of coriander
- Bunch of parsley
- 2 tbsp coconut yoghurt
- 1 tsp harissa paste
Steps
- Add cauliflower to a bowl with the Schwarma paste and a drizzle of oil, mix till coated.
- Air fry at 190°C until crispy, roughly 15-20 minutes.
- Meanwhile blend ingredients from cauliflower leaves to parsley in the blender.
- Drizzle some olive oil, season with salt and pepper and add a little water to achieve desired consistency.
- Mix harissa and yoghurt ingredients in a bowl.
- Char your pitas in a skillet.
- Add spinach, red onion, cauliflower, then the zhug, harissa yoghurt and top with coriander.
