Ingredients

  • 250g orzo
  • 1 tsp salt
  • 24 cloves garlic
  • 2 red chillies, sliced
  • 100ml vegetable oil
  • 4 tbsp vegan parmesan
  • 1 bunch broccolini

Steps

  1. Preheat the oven to 180°C.
  2. Place garlic and chillies into a small ramekin and cover with oil.
  3. Place into the oven and bake for 20-30 minutes.
  4. Meanwhile, add your orzo, salt, and 400ml of boiling water to a pan.
  5. Cook the orzo to packet instructions and then drain, reserving some water.
  6. Once confit is cooked add to a pan with the orzo, parmesan and broccolini.
  7. Add ¼ cup pasta water and cook until broccolini is tender.
