Garlic and chilli confit orzo
Ingredients
- 250g orzo
- 1 tsp salt
- 24 cloves garlic
- 2 red chillies, sliced
- 100ml vegetable oil
- 4 tbsp vegan parmesan
- 1 bunch broccolini
Steps
- Preheat the oven to 180°C.
- Place garlic and chillies into a small ramekin and cover with oil.
- Place into the oven and bake for 20-30 minutes.
- Meanwhile, add your orzo, salt, and 400ml of boiling water to a pan.
- Cook the orzo to packet instructions and then drain, reserving some water.
- Once confit is cooked add to a pan with the orzo, parmesan and broccolini.
- Add ¼ cup pasta water and cook until broccolini is tender.
