Scallion oil chicken noodles
Ingredients
- 4-6 scallions
- 2 tbsp minced ginger
- 2 tbsp minced garlic
- 2 vegan chicken fillets
- 2 packets instant noodles
- ½ tsp salt
- 1 tsp dark soy sauce
- 4 tbsp hot oil
Steps
- Finely mince scallions and ginger and put it in a heat resistant bowl. Set aside.
- Cook chicken fillets according to package instructions. Set aside.
- Heat 3 tbsp of oil, once shimmering pour over the ginger and scallions. Mix in salt.
- Boil instant noodles 1 minute less than package instructions.
- Drain noodles and transfer to the wok.
- Mix in instant noodle seasoning packet, dark soy sauce, and a bit of water.
- Serve noodles, chicken, then a spoonful of ginger scallion oil on the chicken.
