Scallion oil chicken noodles

Ingredients

  • 4-6 scallions
  • 2 tbsp minced ginger
  • 2 tbsp minced garlic
  • 2 vegan chicken fillets
  • 2 packets instant noodles
  • ½ tsp salt
  • 1 tsp dark soy sauce
  • 4 tbsp hot oil

Steps

  1. Finely mince scallions and ginger and put it in a heat resistant bowl. Set aside.
  2. Cook chicken fillets according to package instructions. Set aside.
  3. Heat 3 tbsp of oil, once shimmering pour over the ginger and scallions. Mix in salt.
  4. Boil instant noodles 1 minute less than package instructions.
  5. Drain noodles and transfer to the wok.
  6. Mix in instant noodle seasoning packet, dark soy sauce, and a bit of water.
  7. Serve noodles, chicken, then a spoonful of ginger scallion oil on the chicken.
