Mushroom rice
Ingredients
- 2 servings rice
- 250g mushrooms, sliced
- 300g vegan beef stock
- 25g butter
- 2 tbsp flour
- 1 tbsp oyster sauce
- ½ tsp black pepper
- ½ tsp sugar
- ¼ tsp salt
Steps
- Heat a tablespoon of oil in a frying pan. On medium-high heat.
- Add the mushrooms and cook until softened. Remove and set aside.
- Reduce heat to low-medium. Add a knob of butter into the pan.
- Once it has melted, add flour. Mix until it becomes a roux and cook for 1 minute.
- Add stock. Increase heat back to medium and stir until it becomes a thick gravy.
- Add the mushrooms back. Add pepper, salt and sugar to taste. Mix well.
