Spicy orzo and kale

Ingredients

  • 1 onion, diced
  • 6 cloves garlic, sliced
  • Juice of 1 lemon
  • 1 tsp crushed red pepper
  • 6 cups vegetable stock
  • 230g orzo
  • 150g kale
  • 30g basil, thinly sliced

Steps

  1. Heat a tablespoon of olive oil in a large pot over medium heat.
  2. Add the onion and cook until sweated out and starting to turn golden brown.
  3. Add the garlic, lemon juice and crushed red pepper and cook until fragrant.
  4. Pour in the stock and season it liberally with salt and pepper.
  5. Bring to a boil and then reduce heat, simmer for 20 minutes until it reduces. Season.
  6. Add the kale and basil and cook until the kale is wilted.
  7. Taste and season again to your preferences.
  8. Meanwhile, bring a large pot of salted water and cook the orzo until al dente.
  9. Drain and divide the orzo between bowls. Ladle the hot broth over the orzo.
