Spicy orzo and kale
Ingredients
- 1 onion, diced
- 6 cloves garlic, sliced
- Juice of 1 lemon
- 1 tsp crushed red pepper
- 6 cups vegetable stock
- 230g orzo
- 150g kale
- 30g basil, thinly sliced
Steps
- Heat a tablespoon of olive oil in a large pot over medium heat.
- Add the onion and cook until sweated out and starting to turn golden brown.
- Add the garlic, lemon juice and crushed red pepper and cook until fragrant.
- Pour in the stock and season it liberally with salt and pepper.
- Bring to a boil and then reduce heat, simmer for 20 minutes until it reduces. Season.
- Add the kale and basil and cook until the kale is wilted.
- Taste and season again to your preferences.
- Meanwhile, bring a large pot of salted water and cook the orzo until al dente.
- Drain and divide the orzo between bowls. Ladle the hot broth over the orzo.
