Garlic leeks and beans
Ingredients
- 4 leeks
- 6 cloves garlic
- 2 cans cannellini beans
- 2 tbsp tahini
- Juice of ½ lemon
- 1 tsp coriander
- 1 tsp cumin
- ½ cup stock
- Chives, chopped
- Crusty bread
Steps
- Preheat the oven to 180°C.
- Heat some oil in the wok. Once hot and add the leeks, cook until jammy.
- Add the garlic, tahini, lemon juice, cumin and coriander. Season with salt and pepper.
- Add the stock and mix. Pop in the oven for 15 minutes.
- Top with chives and serve with bread.
