Smoked chipotle cauliflower
Ingredients
- 1 cauliflower, quartered
- 2 onions, thickly sliced
- Baby sweet peppers
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp garlic granules
- Sprinkle of corn starch
- 4-5 gloves garlic
- 1 tbsp sriracha
- 2 tbsp chipotle paste
- 2 tbsp soy sauce
- 2 tbsp water
- 1 tbsp agave
- ½ cup vegan yogurt
- Coriander
- 2 cloves garlic
- Juice of ½ lime
- Flatbreads
Steps
- Coat the cauliflower with paprika, cumin, garlic, salt, cornstarch and oil.
- Massage in the seasoning until evenly coated.
- Heat the griddle and sear the cauliflower on each side.
- Transfer to the oven along with onion and peppers and cook until golden brown.
- Meanwhile heat oil in a pan. Once hot add the garlic and cook until fragrant.
- Add ingredients from sriracha to again and cook until heated through.
- Blend ingredients from yogurt to lime.
