Ingredients

  • 1 pack vegan burger patties
  • Bamboo skewers
  • 3 tsp harissa
  • Handful parsley, chopped
  • Handful coriander, chopped
  • 4 cloves garlic, minced
  • ½ tsp coriander
  • ½ tsp cumin
  • ½ tsp sumac
  • ½ lemon, zest not juice
  • 4 flatbreads
  • ¼ cucumber, chopped
  • 2 tomatoes, roughly chopped
  • 8 mint leaves, roughly chopped
  • ½ red onion, finely chopped
  • Chimichurri
  • Vegan yogurt

Steps

  1. Put the burgers in bowl, add ingredients from harissa to lemon zest, season and mix well.
  2. Shape into two long rectangles, carefully skewer with the bamboo skewers.
  3. Place on grease proof paper on a plate, keep covered in the fridge until needed
  4. In a bowl mix the tomato, cucumber, mint, red onion and drizzle with olive oil and splash of vinegar.
  5. Heat the griddle and lightly brush the kofte with oil.
  6. Place on the BBQ, cook until crispy on one side, then flip and cook on the other side.
  7. Brush the flatbreads with oil, toast on the BBQ for 30 seconds until warm.
  8. Place the flatbread on a plate, add salad and kofte, drizzle over the chimichurri and yogurt.
