Curried sausage
Ingredients
- 6 sausages
- 6 vegan sausages
- 2 onions
- 2 carrots
- 1 red pepper
- 1 green pepper
- 6 cloves garlic
- 1 tbsp curry powder
- 1 tsp cumin
- 2 tbsp fruit chutney
- 2 cups vegetable stock
- 1 cup frozen peas
- 1 ΒΌ cups rice
Steps
- In a frying pan cook the sausages until browned all over. Transfer to plate.
- In the wok add onion, carrot and garlic. Once slightly cooked add bell peppers.
- Meanwhile start cooking the rice.
- When vegetables are softened add the curry powder and cumin. Stir to coat for a minute.
- Add fruit chutney and stock. Return sausages to pan.
- Cover, bring to the boil then simmer for 10 minutes.
- If sauce is not thickening add a cornstarch slurry.
- Stir in peas and cook for several minutes.
