Ingredients

  • 6 sausages
  • 6 vegan sausages
  • 2 onions
  • 2 carrots
  • 1 red pepper
  • 1 green pepper
  • 6 cloves garlic
  • 1 tbsp curry powder
  • 1 tsp cumin
  • 2 tbsp fruit chutney
  • 2 cups vegetable stock
  • 1 cup frozen peas
  • 1 ΒΌ cups rice

Steps

  1. In a frying pan cook the sausages until browned all over. Transfer to plate.
  2. In the wok add onion, carrot and garlic. Once slightly cooked add bell peppers.
  3. Meanwhile start cooking the rice.
  4. When vegetables are softened add the curry powder and cumin. Stir to coat for a minute.
  5. Add fruit chutney and stock. Return sausages to pan.
  6. Cover, bring to the boil then simmer for 10 minutes.
  7. If sauce is not thickening add a cornstarch slurry.
  8. Stir in peas and cook for several minutes.
