Curried cauliflower traybake

Ingredients

  • 2 leeks, 2cm chunks
  • 1 cauliflower head
  • 100g orzo
  • 500ml plant cream
  • 1 tsp salt
  • 1 tbsp maple syrup
  • 1 ½ tbsp curry powder
  • 1 tsp turmeric
  • Thumb of ginger
  • 4 cloves garlic
  • Small onion
  • Juice of 1 lime
  • 1 tbsp soy sauce
  • 400ml veg stock
  • ½ tsp black pepper

Steps

  1. Preheat the oven to 200ºC. Drizzle olive oil on a baking tray.
  2. Blend ingredients from cream to pepper for the sauce.
  3. Remove the cauliflower leaves, wash and roughly chop them.
  4. Slice the cauliflower into 1-2cm steaks.
  5. Add the orzo, leeks & cauliflower to the tray, making sure the orzo is at the bottom.
  6. Pour over the cream mixture, making sure the orzo is covered, top with a drizzle of olive oil.
  7. Put in the oven for 45 minutes until the cauliflower is cooked through and crispy on top.
