Ingredients

  • 4 medium bananas
  • 8 spring roll wrappers
  • ¼ cup sugar
  • ½ tbsp cinnamon
  • ½ cup brown sugar
  • ¾ cup coconut milk
  • ¼ tsp salt

Steps

  1. In a small pot, add the brown sugar and cook for 1 minute over medium-high heat.
  2. Add the thick white part of the coconut milk to the pot and stir till well combined.
  3. Bring to a boil, lower the heat and let it simmer for 15 minutes, stir frequently.
  4. Add the salt and mix turning off the heat, let it cool for 10 minutes then transfer to a jar.
  5. Peel and cut the banana into 7-10cm long pieces.
  6. In a wide bowl, mix together the sugar and cinnamon.
  7. Roll the banana slices in the mixture to thinly coat them.
  8. Place a banana on one corner of the spring roll wrapper.
  9. start rolling towards the centre and form a triangle.
  10. Fold both corners inward and press them onto the roll, continue to roll until you reach the other end.
  11. Wet the end with a little bit of water to seal them better, repeat to finish all the rolls.
  12. Brush a thin layer of oil on the rolls, place onto the air frying tray.
  13. Air fry at 200°C for 5 minutes, flip them, and fry until they're golden all around.
  14. Drizzle on the caramel sauce or serve the sauce as a dip.
