Kebabs with couscous
Ingredients
- 1 tomato, diced
- 1 red onion, finely chopped
- 1 clove garlic, finely chopped.
- 20g parsley, chopped
- 20g coriander, chopped
- Juice of ½ lemon
- ½ tsp sumac
- 1 pack spiced kebab meat
- Skewers
- 1 red onion, roughly chopped
- 2 bell peppers, chopped
- 240g couscous
- 360ml vegetable stock
- Chopped parsley
- Chopped coriander
- Juice of ½ lemon
Steps
- Add the tomato, onion, garlic, coriander and parsley to a bowl.
- Add 1 tbsp olive oil, juice of ½ lemon, sumac and season with salt and pepper
- Thread the kebab meat, red onion and bell peppers on the skewers and fry at medium heat.
- Cover the couscous with the vegetable stock and wait 5 minutes.
- To the couscous add the lemon juice, 1 tbsp olive oil, parsley and coriander.
- Fluff the couscous with a fork.
