Kebabs with couscous

Ingredients

  • 1 tomato, diced
  • 1 red onion, finely chopped
  • 1 clove garlic, finely chopped.
  • 20g parsley, chopped
  • 20g coriander, chopped
  • Juice of ½ lemon
  • ½ tsp sumac
  • 1 pack spiced kebab meat
  • Skewers
  • 1 red onion, roughly chopped
  • 2 bell peppers, chopped
  • 240g couscous
  • 360ml vegetable stock
  • Chopped parsley
  • Chopped coriander
  • Juice of ½ lemon

Steps

  1. Add the tomato, onion, garlic, coriander and parsley to a bowl.
  2. Add 1 tbsp olive oil, juice of ½ lemon, sumac and season with salt and pepper
  3. Thread the kebab meat, red onion and bell peppers on the skewers and fry at medium heat.
  4. Cover the couscous with the vegetable stock and wait 5 minutes.
  5. To the couscous add the lemon juice, 1 tbsp olive oil, parsley and coriander.
  6. Fluff the couscous with a fork.
