Tarka roasted cauliflower
Ingredients
- 1 large cauliflower
- Olive oil
- 100g butter
- 2 tsp mustard seeds
- 2 tsp cumin seeds
- 6 garlic cloves, minced
- 2 inch ginger, minced
- 30 curry leaves
- 1 tsp chilli powder
- 5 tbsp yoghurt
- Flatbreads, to serve
Steps
- Preheat your oven to 180°C.
- Quarter the cauliflower, drizzle with olive oil and season with salt and pepper.
- Heat a pan over medium then sear the cauliflower until browned on both sides.
- Transfer the cauliflower to the oven and roast for 15 minutes or until tender.
- Meanwhile, melt the butter in a small saucepan over medium.
- Let the butter bubble for a few minutes until the bubbles die down.
- Once the butter is caramelised add the mustard and cumin seeds and cook for 1 minute.
- Then add the garlic, ginger, curry leaves and chilli powder and cook for another minute.
- Season with salt and pepper to taste.
- Spread the yoghurt onto a plate and top with the cauliflower.
- Pour the tarka over the top then serve
