Ingredients

  • 1 large cauliflower
  • Olive oil
  • 100g butter
  • 2 tsp mustard seeds
  • 2 tsp cumin seeds
  • 6 garlic cloves, minced
  • 2 inch ginger, minced
  • 30 curry leaves
  • 1 tsp chilli powder
  • 5 tbsp yoghurt
  • Flatbreads, to serve

Steps

  1. Preheat your oven to 180°C.
  2. Quarter the cauliflower, drizzle with olive oil and season with salt and pepper.
  3. Heat a pan over medium then sear the cauliflower until browned on both sides.
  4. Transfer the cauliflower to the oven and roast for 15 minutes or until tender.
  5. Meanwhile, melt the butter in a small saucepan over medium.
  6. Let the butter bubble for a few minutes until the bubbles die down.
  7. Once the butter is caramelised add the mustard and cumin seeds and cook for 1 minute.
  8. Then add the garlic, ginger, curry leaves and chilli powder and cook for another minute.
  9. Season with salt and pepper to taste.
  10. Spread the yoghurt onto a plate and top with the cauliflower.
  11. Pour the tarka over the top then serve
