Ingredients

  • Chimichurri sauce
  • 4 vegan chorizo sausages
  • 2 baguettes
  • 1 red onion, finely chopped
  • ½ tbsp red wine vinegar
  • 5 plum tomatoes, finely chopped
  • ½ tbsp olive oil
  • ½ tsp chilli flakes
  • ½ tsp salt
  • ½ tsp pepper

Steps

  1. Make chimichurri sauce according to the recipe.
  2. In a medium bowl combine ingredients from red onion to pepper for the salsa. Set aside.
  3. Heat a frying pan with a teaspoon of oil. Add the chorizo to the pan and fry until fully cooked.
  4. Remove the chorizo from the pan and slice in half lengthways without cutting the entire way through.
  5. Get your small baguette roll and slice in half but not all the way through.
  6. Place it face down in the pan used to cook the chorizo, and fry for 3 minutes on medium.
  7. Remove from the pan and put it on a plate. Serve by adding on the chimichurri, chorizo, and salsa.
