Choripán
Ingredients
- Chimichurri sauce
- 4 vegan chorizo sausages
- 2 baguettes
- 1 red onion, finely chopped
- ½ tbsp red wine vinegar
- 5 plum tomatoes, finely chopped
- ½ tbsp olive oil
- ½ tsp chilli flakes
- ½ tsp salt
- ½ tsp pepper
Steps
- Make chimichurri sauce according to the recipe.
- In a medium bowl combine ingredients from red onion to pepper for the salsa. Set aside.
- Heat a frying pan with a teaspoon of oil. Add the chorizo to the pan and fry until fully cooked.
- Remove the chorizo from the pan and slice in half lengthways without cutting the entire way through.
- Get your small baguette roll and slice in half but not all the way through.
- Place it face down in the pan used to cook the chorizo, and fry for 3 minutes on medium.
- Remove from the pan and put it on a plate. Serve by adding on the chimichurri, chorizo, and salsa.
