Charred eggplant
Ingredients
- 2 eggplants
- 1 tsp chilli paste
- 1 tsp chilli oil
- 2 cloves garlic
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp maple syrup
- 1 tbsp hoisin
- Rice
- Spring onions
- Sesame seeds
- Pak choi
Steps
- Start by salting your eggplant slices and patting the moisture dry.
- Clean and cook the rice.
- Blend ingredients from chilli paste to hoisin for the marinade.
- Brush one side of each eggplant slice with the marinade.
- Heat skillet with some oil over high and sear the eggplant on the marinated side.
- Brush the other side then flip. Cook until charred and softened.
- Blanch the pak choi.
