Ingredients

  • 2 eggplants
  • 1 tsp chilli paste
  • 1 tsp chilli oil
  • 2 cloves garlic
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • 1 tbsp hoisin
  • Rice
  • Spring onions
  • Sesame seeds
  • Pak choi

Steps

  1. Start by salting your eggplant slices and patting the moisture dry.
  2. Clean and cook the rice.
  3. Blend ingredients from chilli paste to hoisin for the marinade.
  4. Brush one side of each eggplant slice with the marinade.
  5. Heat skillet with some oil over high and sear the eggplant on the marinated side.
  6. Brush the other side then flip. Cook until charred and softened.
  7. Blanch the pak choi.
