Ingredients

  • 1 onion, diced
  • ¼ cup flour
  • 1 tbsp basil
  • 6 cloves garlic, minced
  • 2 tbsp tomato paste
  • 4 vegan sausages, casings removed
  • 3 cups vegetable stock
  • 2 cans diced tomatoes
  • ½ tsp salt
  • ½ tsp pepper
  • 2 cups tortellini
  • 3 cups packed spinach
  • ½ cup vegan parmesan
  • 1 cup vegan cream

Steps

  1. Heat oil in the wok, add the sausage and break into pieces. Cook until browned then set aside.
  2. In the wok add the diced onion and cook until translucent.
  3. Add in the garlic and tomato paste and cook until fragrant.
  4. Turn heat to low and add flour and ¼ cup of stock. Cook until thickened.
  5. Add remaining stock, tomatoes, sausage, basil, salt and pepper, stir.
  6. Bring to a boil then lower to a simmer. Simmer for 20 minutes.
  7. Add tortellini and simmer until almost cooked.
  8. Add spinach, cream and parmesan and cook until spinach is wilted.
