The soup
Ingredients
- 1 onion, diced
- ¼ cup flour
- 1 tbsp basil
- 6 cloves garlic, minced
- 2 tbsp tomato paste
- 4 vegan sausages, casings removed
- 3 cups vegetable stock
- 2 cans diced tomatoes
- ½ tsp salt
- ½ tsp pepper
- 2 cups tortellini
- 3 cups packed spinach
- ½ cup vegan parmesan
- 1 cup vegan cream
Steps
- Heat oil in the wok, add the sausage and break into pieces. Cook until browned then set aside.
- In the wok add the diced onion and cook until translucent.
- Add in the garlic and tomato paste and cook until fragrant.
- Turn heat to low and add flour and ¼ cup of stock. Cook until thickened.
- Add remaining stock, tomatoes, sausage, basil, salt and pepper, stir.
- Bring to a boil then lower to a simmer. Simmer for 20 minutes.
- Add tortellini and simmer until almost cooked.
- Add spinach, cream and parmesan and cook until spinach is wilted.
