Ingredients

  • 250g linguine
  • 1 onion, chopped
  • 2 shallots, chopped
  • 3 cloves garlic, minced
  • 2 red peppers, thinly sliced
  • 2 cups spinach, chopped
  • 1 ½ tbsp tomato paste
  • 1 stock cube
  • 2 tbsp harissa
  • 1 tbsp oregano
  • ½ tsp paprika
  • 1 cup cream
  • 1 cup frozen peas
  • 3 tbsp nooch
  • 3 tbsp pine nuts
  • ½ lemon, zest and juice
  • Fresh basil

Steps

  1. Cook pasta according to the package directions, reserve ½ cup of the cooking water.
  2. In the wok on high heat, add olive oil. Once hot add the onion and cook until translucent.
  3. Add the garlic, bell pepper and shallots to and cook until fragrant.
  4. Add the tomato paste, stock, harissa, oregano, paprika, and salt and cook for 2 minutes.
  5. Add the reserved pasta cooking water to the pan.
  6. Add the pasta along with the remaining ingredients except basil and lemon.
  7. Once heated through, add some lemon zest and squeeze over the lemon juice.
