Creamy harissa pasta
Ingredients
- 250g linguine
- 1 onion, chopped
- 2 shallots, chopped
- 3 cloves garlic, minced
- 2 red peppers, thinly sliced
- 2 cups spinach, chopped
- 1 ½ tbsp tomato paste
- 1 stock cube
- 2 tbsp harissa
- 1 tbsp oregano
- ½ tsp paprika
- 1 cup cream
- 1 cup frozen peas
- 3 tbsp nooch
- 3 tbsp pine nuts
- ½ lemon, zest and juice
- Fresh basil
Steps
- Cook pasta according to the package directions, reserve ½ cup of the cooking water.
- In the wok on high heat, add olive oil. Once hot add the onion and cook until translucent.
- Add the garlic, bell pepper and shallots to and cook until fragrant.
- Add the tomato paste, stock, harissa, oregano, paprika, and salt and cook for 2 minutes.
- Add the reserved pasta cooking water to the pan.
- Add the pasta along with the remaining ingredients except basil and lemon.
- Once heated through, add some lemon zest and squeeze over the lemon juice.
