Char siu
Ingredients
- 400g oyster mushrooms
- 3 tbsp hoisin
- 2 ½ tbsp fermented red beancurd
- 3 tbsp shaoxing wine
- ½ tsp 5 spice
- ½ tsp sesame oil
- 1 tbsp dark soy sauce
- 3 tbsp agave
- ½ tsp red colouring
- Handful of woodchips
Steps
- Mix ingredients (except mushrooms and agave) in a bowl to form a marinade.
- Press and sear mushrooms in a very hot skillet.
- Add mushrooms to marinade, set aside for 1 hour minimum.
- Soak woodchips in water for 30 minutes.
- Place woodchips in a smoking tray and fire up one side of the bbq.
- On the other side of the grill place the marinated mushrooms.
- Close BBQ lid and let the mushrooms cook for 50 minutes flipping and basting every 10 minutes.
- Remove from BBQ and let rest for 5 minutes then slice into segments!
