Ingredients

  • 400g oyster mushrooms
  • 3 tbsp hoisin
  • 2 ½ tbsp fermented red beancurd⁣
  • 3 tbsp shaoxing wine⁣
  • ½ tsp 5 spice
  • ½ tsp sesame oil⁣
  • 1 tbsp dark soy sauce⁣
  • 3 tbsp agave
  • ½ tsp red colouring
  • Handful of woodchips

Steps

  1. Mix ingredients (except mushrooms and agave) in a bowl to form a marinade.
  2. Press and sear mushrooms in a very hot skillet.
  3. Add mushrooms to marinade, set aside for 1 hour minimum.⁣
  4. Soak woodchips in water for 30 minutes.
  5. Place woodchips in a smoking tray and fire up one side of the bbq.
  6. On the other side of the grill place the marinated mushrooms.
  7. Close BBQ lid and let the mushrooms cook for 50 minutes flipping and basting every 10 minutes.
  8. Remove from BBQ and let rest for 5 minutes then slice into segments!
