  • Noodles
  • Pak choi
  • Tofu, thinly sliced
  • 1 tbsp light soy sauce
  • Splash of dark soy sauce
  • 1 tsp agave
  • 1 tsp sesame oil
  • Chilli oil
  • Garlic, minced
  • Ginger, minced
  • Black vinegar
  • Sichuan peppercorns

Steps

  1. Bring a small pot of water to the boil.
  2. Meanwhile toast the sichuan peppercorns. Once toasted grind in the mortar and pestle.
  3. Cook noodles according to packet instructions along with tofu. At the last minute add the pak choi.
  4. Drain, rinse with cold water and set aside.
  5. In a bowl whisk soy sauces, agave, sesame oil, black vinegar, sichuan peppercorns and chilli oil.
  6. Add in the noodles, greens and tofu and mix until well coated.
