Ingredients

  • 1 block firm tofu
  • ¼ cup vegan yogurt
  • 2 red chillies
  • 2 cloves garlic
  • 1 tsp cumin
  • 1 tsp fenugreek
  • 1 tsp cinnamon
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1 tbsp oil
  • 1 tsp salt
  • 1 ½ tbsp tomato purée
  • ½ tbsp brown sugar
  • 1 ½ cups vegan yogurt
  • ¼ cucumber, grated
  • Coriander, finely chopped
  • Mint, finely chopped
  • 1 tbsp lemon juice
  • ½ tsp cumin
  • 2 large tomatoes
  • Red onion
  • Coriander
  • Juice of 1 lime
  • Salt
  • 4 naan

Steps

  1. Drain and press the tofu.
  2. Grab the mortar and pestle and add the garlic and chilli.
  3. Grind to form a paste then mix the spices into the paste.
  4. Add the tomato puree and yogurt and mix until combined.
  5. Cube the tofu and mix in with the marinade, leave for as long as you can.
  6. In a bowl mix ingredients from yogurt to cumin. Set aside.
  7. In another bowl mix the remaining ingredients.
  8. Add the tofu pieces to the skewers.
  9. Put them in the oven on high until the tofu is cooked and charred.
  10. Warm the naan and load up the salad, top with the tofu skewers and the raita.
