Tandoori tofu skewers
Ingredients
- 1 block firm tofu
- ¼ cup vegan yogurt
- 2 red chillies
- 2 cloves garlic
- 1 tsp cumin
- 1 tsp fenugreek
- 1 tsp cinnamon
- 1 tsp coriander
- 1 tsp turmeric
- 1 tbsp oil
- 1 tsp salt
- 1 ½ tbsp tomato purée
- ½ tbsp brown sugar
- 1 ½ cups vegan yogurt
- ¼ cucumber, grated
- Coriander, finely chopped
- Mint, finely chopped
- 1 tbsp lemon juice
- ½ tsp cumin
- 2 large tomatoes
- Red onion
- Coriander
- Juice of 1 lime
- Salt
- 4 naan
Steps
- Drain and press the tofu.
- Grab the mortar and pestle and add the garlic and chilli.
- Grind to form a paste then mix the spices into the paste.
- Add the tomato puree and yogurt and mix until combined.
- Cube the tofu and mix in with the marinade, leave for as long as you can.
- In a bowl mix ingredients from yogurt to cumin. Set aside.
- In another bowl mix the remaining ingredients.
- Add the tofu pieces to the skewers.
- Put them in the oven on high until the tofu is cooked and charred.
- Warm the naan and load up the salad, top with the tofu skewers and the raita.
