Ingredients

  • 2 ½ cups cooked rice
  • 2 tbsp red curry paste
  • 4 cloves garlic
  • 2 shallots
  • 3 lime leaves
  • 3 tsp sugar
  • 3 tsp vegan fish sauce
  • 1 chilli
  • 2 tbsp vegan fish sauce
  • 2 cloves garlic
  • juice of ½ lime
  • 2 Tbsp sugar
  • ¼ cup water
  • Handful mint, chopped
  • Handful coriander, chopped
  • Peanuts
  • Coconut flakes
  • Fried shallots
  • Lettuce leaves

Steps

  1. Add the garlic, shallots, lime leaves, curry paste, sugar and fish sauce to the cooked rice.
  2. Mix thoroughly then shape into balls.
  3. Fry the balls in the air fryer until crispy.
  4. In a frying pan toast the peanuts and coconut until lightly browned.
  5. Combine ingredients from chilli to water in a small bowl.
  6. Assemble everything in a bowl and combine with the dressing.
