Nam khao
Ingredients
- 2 ½ cups cooked rice
- 2 tbsp red curry paste
- 4 cloves garlic
- 2 shallots
- 3 lime leaves
- 3 tsp sugar
- 3 tsp vegan fish sauce
- 1 chilli
- 2 tbsp vegan fish sauce
- 2 cloves garlic
- juice of ½ lime
- 2 Tbsp sugar
- ¼ cup water
- Handful mint, chopped
- Handful coriander, chopped
- Peanuts
- Coconut flakes
- Fried shallots
- Lettuce leaves
Steps
- Add the garlic, shallots, lime leaves, curry paste, sugar and fish sauce to the cooked rice.
- Mix thoroughly then shape into balls.
- Fry the balls in the air fryer until crispy.
- In a frying pan toast the peanuts and coconut until lightly browned.
- Combine ingredients from chilli to water in a small bowl.
- Assemble everything in a bowl and combine with the dressing.
