Ingredients

  • 1 ½ tbsp vegan butter
  • 4 cloves garlic, sliced
  • 1 can butter beans, drained
  • 1 can whole peeled tomatoes
  • ½ can water
  • 2 tbsp tomato paste
  • 1 tbsp dried marjoram
  • ½ tsp chilli flakes
  • ½ tbsp dried oregano
  • ½ tsp salt
  • 1 ½ tsp sugar
  • 1 bunch kale
  • 1 lemon
  • Toast

Steps

  1. Cut the kale into shreds and add it to a large bowl.
  2. Squeeze the lemon juice over the kale and massage to break down the tough fibres.
  3. Season with salt and pepper to taste and set aside.
  4. Heat the butter in a pan over medium. Once melted, add the garlic and cook until fragrant.
  5. Add the beans then crush the tomatoes into the pan. Add the juice as well and water.
  6. Add ingredients from tomato paste to sugar. Stir well and reduce to a simmer.
  7. Let everything simmer for about 10 minutes, stirring occasionally. Season.
