Butter beans in tomato sauce
Ingredients
- 1 ½ tbsp vegan butter
- 4 cloves garlic, sliced
- 1 can butter beans, drained
- 1 can whole peeled tomatoes
- ½ can water
- 2 tbsp tomato paste
- 1 tbsp dried marjoram
- ½ tsp chilli flakes
- ½ tbsp dried oregano
- ½ tsp salt
- 1 ½ tsp sugar
- 1 bunch kale
- 1 lemon
- Toast
Steps
- Cut the kale into shreds and add it to a large bowl.
- Squeeze the lemon juice over the kale and massage to break down the tough fibres.
- Season with salt and pepper to taste and set aside.
- Heat the butter in a pan over medium. Once melted, add the garlic and cook until fragrant.
- Add the beans then crush the tomatoes into the pan. Add the juice as well and water.
- Add ingredients from tomato paste to sugar. Stir well and reduce to a simmer.
- Let everything simmer for about 10 minutes, stirring occasionally. Season.
