Braised potatoes with tofu

Ingredients

  • Rice
  • 2 potatoes, peeled & sliced thinly
  • Garlic shoots
  • Pak choi
  • 2 shallots, finely diced
  • 6 cloves garlic, minced
  • 3 stalks spring onion, chopped
  • 1 block tofu
  • 500ml water
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 2 tsp shaoxing wine
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 1 tsp sesame oil
  • Dash of white pepper

Steps

  1. Clean and cook the rice.
  2. Drain and press the tofu then crumble until it resembles mince.
  3. Mix ingredients from soy sauce to white pepper to make the sauce, set aside.
  4. Fry the potato slices over medium heat until lightly golden browned. Drain and set aside.
  5. Remove excess oil from the pan. Add garlic, shallot and spring onion whites. Sauté until fragrant.
  6. Add vegan mince. Sauté until light browned.
  7. Add the sauce, stir quickly to combine. Add water and fried potato slices.
  8. Bring to a simmer and braise until the sauce thickens up and potatoes soften.
  9. Once almost done add the garlic shoots and pak choi, simmer until cooked.
