Braised potatoes with tofu
Ingredients
- Rice
- 2 potatoes, peeled & sliced thinly
- Garlic shoots
- Pak choi
- 2 shallots, finely diced
- 6 cloves garlic, minced
- 3 stalks spring onion, chopped
- 1 block tofu
- 500ml water
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 2 tsp shaoxing wine
- 1 tsp dark soy sauce
- 1 tsp sugar
- 1 tsp sesame oil
- Dash of white pepper
Steps
- Clean and cook the rice.
- Drain and press the tofu then crumble until it resembles mince.
- Mix ingredients from soy sauce to white pepper to make the sauce, set aside.
- Fry the potato slices over medium heat until lightly golden browned. Drain and set aside.
- Remove excess oil from the pan. Add garlic, shallot and spring onion whites. Sauté until fragrant.
- Add vegan mince. Sauté until light browned.
- Add the sauce, stir quickly to combine. Add water and fried potato slices.
- Bring to a simmer and braise until the sauce thickens up and potatoes soften.
- Once almost done add the garlic shoots and pak choi, simmer until cooked.
