Baked ziti
Ingredients
- 300g Italian-style sausages
- 1 onion, chopped
- 2 shallots, minced
- 6 cloves garlic, sliced
- ½ cup red wine
- 1 tsp sugar
- 1 tsp Italian seasoning
- ½ tsp red pepper flakes
- ½ tsp ground fennel
- 2 cans diced tomatoes
- ¼ cup tomato paste
- 2 cups water
- 2 bay leaves
- ½ tsp salt and pepper
- Penne
- 2 cups grated mozzarella
- Cashew ricotta
- ½ cup cream
- Fresh basil
Steps
- Preheat the oven to 220°C and prepare a casserole dish.
- Heat some oil in the wok on medium. Once hot add the sausage, breaking it into pieces.
- Once sausage is cooked add the onion, shallot and garlic. Cook until fragrant.
- Season with the sugar, Italian seasoning, pepper flakes and fennel, mixing to combine.
- Add the wine, pour in and cook until alcohol burns off.
- Next, add the tomatoes, tomato paste and bay leaves. Season with salt and pepper.
- Add the water and penne, simmer until pasta is cooked. Remove from heat.
- Stir in the cream, ½ of the mozzarella, and 3 tablespoons of the basil.
- Transfer to the casserole dish and sprinkle the remaining mozzarella on top.
- Bake uncovered in the oven for 10 minutes. Sprinkle with remaining basil.
