  • 300g Italian-style sausages
  • 1 onion, chopped
  • 2 shallots, minced
  • 6 cloves garlic, sliced
  • ½ cup red wine
  • 1 tsp sugar
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes
  • ½ tsp ground fennel
  • 2 cans diced tomatoes
  • ¼ cup tomato paste
  • 2 cups water
  • 2 bay leaves
  • ½ tsp salt and pepper
  • Penne
  • 2 cups grated mozzarella
  • Cashew ricotta
  • ½ cup cream
  • Fresh basil

Steps

  1. Preheat the oven to 220°C and prepare a casserole dish.
  2. Heat some oil in the wok on medium. Once hot add the sausage, breaking it into pieces.
  3. Once sausage is cooked add the onion, shallot and garlic. Cook until fragrant.
  4. Season with the sugar, Italian seasoning, pepper flakes and fennel, mixing to combine.
  5. Add the wine, pour in and cook until alcohol burns off.
  6. Next, add the tomatoes, tomato paste and bay leaves. Season with salt and pepper.
  7. Add the water and penne, simmer until pasta is cooked. Remove from heat.
  8. Stir in the cream, ½ of the mozzarella, and 3 tablespoons of the basil.
  9. Transfer to the casserole dish and sprinkle the remaining mozzarella on top.
  10. Bake uncovered in the oven for 10 minutes. Sprinkle with remaining basil.
