Gnocchi with lemon garlic sauce

Ingredients

  • 600g gnocchi
  • 150g baby spinach
  • 1 cup frozen peas
  • 3 shallots, finely chopped
  • 6 garlic cloves, minced
  • 2 ⅔ tbsp flour
  • ⅓ cup dry white wine
  • 1 ⅓ tbsp thyme
  • 1 ⅓ cups coconut milk
  • ⅔ tsp salt
  • 1 ⅓ tbsp lemon juice
  • 1 ⅓ tsp lemon zest
  • ⅓ cup nooch
  • Black pepper, to taste
  • Chilli flakes

Steps

  1. Cook the gnocchi according to package instructions. Set aside.
  2. Heat oil in the wok on medium. Once hot add shallots and cook until translucent.
  3. Add the garlic and cook until fragrant.
  4. Stir in the flour. Cook until flour forms a paste and coats the shallots.
  5. Add the wine and thyme, then bring liquid to a simmer. Simmer until liquid is reduced by about half.
  6. Add the salt, then incorporate the coconut milk a bit at a time.
  7. Bring to a boil, then lower to a simmer. Cook until sauce has thickened.
  8. Add the lemon juice, zest, nooch, gnocchi, peas and spinach. Stir to coat then cook until spinach is wilted.
  9. Season with salt, pepper and chilli flakes.
