Sesame balls
Ingredients
- 60g boiling water
- 50g sugar
- 120g glutinous rice flour
- Small pinch of salt
- 1 tsp oil
- 2 cups sesame seeds, untoasted
- 75g red bean paste
- 75g roasted peanuts, chopped
- 45g agave
- 1 tbsp glutinous rice flour
- 3 tbsp water
Steps
- Mix the roasted peanuts with the agave and a pinch of salt. Roll into 6 balls.
- Divide the red bean paste into 6 portions and roll into balls.
- In a bowl add glutinous rice flour, sugar, and small pinch of salt in a bowl. Whisk to mix.
- Pour 60ml boiling water into the mixture to start with. Use a rubber spatula to stir and mix.
- Once cool add the oil and continue to knead into smooth non-sticky dough.
- If too sticky add a bit more rice flour, if too dry add some more hot water.
- Roll the dough into a log and then divide into 12 equal small dough balls. Keeping them covered.
- Take one ball and use your thumb to make a well in the centre, widen the well to fit the filling in there.
- Put 1 of the fillings in the dough. Gather the edge to enclose and pinch to seal.
- Roll the dough ball in between your palms to make it smooth, ensuring there are no cracks. Repeat.
- Prepare the flour paste by mixing the flour and water together.
- Roll one dough into the paste and then roll into the sesame seeds. Repeat with the rest.
- Preheat your air fryer 160°C for 5 minutes.
- Brush the sesame balls with oil and put in the air fryer basket. Air fry for about 10-15 minutes, checking occasionally.
- Increase the temperature to 180°C and air fry for another 15 minutes or until lightly golden brown
