BBQ shredded tofu
Ingredients
- 1 block tofu
- 1 tbsp olive oil
- 1 tbsp soy sauce
- 1 tsp chilli powder
- ½ tsp smoked paprika
- 1 tsp garlic powder
- ½ cup bbq sauce
- ¼ cup water
- Buns
- Shredded cabbage
- Shredded carrot
- Red onion, thinly sliced
- ½ cup minced coriander
- ½ cup mayo
- 2 tbsp adobo sauce
- 3 tbsp lime juice
- 1 tsp sugar
Steps
- Preheat the oven to 210°C and line a baking tray.
- Drain the tofu and pat it dry then use the large side of a grater to shred the tofu.
- In a large bowl, combine the soy sauce, olive oil, chilli powder, garlic powder and paprika. Add the tofu, mix until coated.
- Spread the tofu in a thin layer on the pan. Bake for 15 minutes, stir the tofu, and bake for an additional 15 minutes.
- Meanwhile add the veggies to a large mixing bowl.
- In a small bowl whisk ingredients from mayo to sugar until combined.
- Pour the dressing over the veggies and stir to combine until thoroughly coated.
- Season with salt and pepper, taste and adjust flavours as needed.
- In another bowl mix the barbecue sauce and water together & pour over the tofu.
- Mix on the pan to combine as much as you can, then return to the oven for another two minutes.
