Ingredients

  • 1 block tofu
  • 1 tbsp olive oil
  • 1 tbsp soy sauce
  • 1 tsp chilli powder
  • ½ tsp smoked paprika
  • 1 tsp garlic powder
  • ½ cup bbq sauce
  • ¼ cup water
  • Buns
  • Shredded cabbage
  • Shredded carrot
  • Red onion, thinly sliced
  • ½ cup minced coriander
  • ½ cup mayo
  • 2 tbsp adobo sauce
  • 3 tbsp lime juice
  • 1 tsp sugar

Steps

  1. Preheat the oven to 210°C and line a baking tray.
  2. Drain the tofu and pat it dry then use the large side of a grater to shred the tofu.
  3. In a large bowl, combine the soy sauce, olive oil, chilli powder, garlic powder and paprika. Add the tofu, mix until coated.
  4. Spread the tofu in a thin layer on the pan. Bake for 15 minutes, stir the tofu, and bake for an additional 15 minutes.
  5. Meanwhile add the veggies to a large mixing bowl.
  6. In a small bowl whisk ingredients from mayo to sugar until combined.
  7. Pour the dressing over the veggies and stir to combine until thoroughly coated.
  8. Season with salt and pepper, taste and adjust flavours as needed.
  9. In another bowl mix the barbecue sauce and water together & pour over the tofu.
  10. Mix on the pan to combine as much as you can, then return to the oven for another two minutes.
