Carrot cake baked oatmeal
Ingredients
- 2 cups oats
- 2 cups plant milk
- ¼ cup almond butter
- 2 tbsp maple syrup
- 2 tsp vanilla
- ¼ cup cranberries
- ¼ cup chopped walnuts
- 2 tbsp chia seeds
- 1 tsp baking powder
- 2 tsp cinnamon
- ½ tsp nutmeg
- Dash of salt
- 1 large carrot
- 300g silken tofu
- 1 tbsp lemon juice
- 4 tbsp icing sugar
- ½ tsp vanilla
Steps
- Add ingredients from oats to salt into a baking dish.
- Grate the carrot and add in the rest of the ingredients. Mix well to combine.
- Bake oatmeal at 200°C for 35-40 minutes.
- Blend the tofu, lemon juice, icing sugar and vanilla to make the icing.
- Spread the icing on top of the oats.
