Ingredients

  • 2 cups oats
  • 2 cups plant milk
  • ¼ cup almond butter
  • 2 tbsp maple syrup
  • 2 tsp vanilla
  • ¼ cup cranberries
  • ¼ cup chopped walnuts
  • 2 tbsp chia seeds
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • Dash of salt
  • 1 large carrot
  • 300g silken tofu
  • 1 tbsp lemon juice
  • 4 tbsp icing sugar
  • ½ tsp vanilla

Steps

  1. Add ingredients from oats to salt into a baking dish.
  2. Grate the carrot and add in the rest of the ingredients. Mix well to combine.
  3. Bake oatmeal at 200°C for 35-40 minutes.
  4. Blend the tofu, lemon juice, icing sugar and vanilla to make the icing.
  5. Spread the icing on top of the oats.
